Flavors
"a taste of the islands like you've never had before"
jerk Cooking
Originally from Jamaica, "jerk" food is marinated in a dark paste made of onion, allspice, garlic and scotch bonnet. It's then cooked slowly over wood and charcoal to give a smokey, spiced flavor synonymous with the Caribbean.
Fresh fish
Whether you like it Cayman style, curried or with coconut sauce, the locally caught fish is fresh as can be and delicious no matter how you cook it.
caribbean classics
Oxtail, curried goat, cayman style beef, turtle stew and conch chowder are all classics of Caribbean food. Some of these dishes change seasonally so there is always something new for us to taste.

Chef Kimberly Lallouz - Montréal
"My third time in Cayman and I thought I had tasted everything, but Chef Dylan took us on the Island Essential tour and we had the best jerk chicken, fried fish and braised oxtail. We stopped at three different locations, each one serving simple ingredients of the utmost quality. There is nothing like local Caribbean food with a great host and a well planned tour (we even caught the sunset at the last shack) what a treat! If he doesn’t take you around you’ll miss out on some amazing secrets!! Thanks Dylan!"
Eileen Stein - Washington
The only thing left to plan for our trip to Grand Cayman was a Food Tour. We are avid travelers and it is always on our list of activities. We prefer a tour off the beaten path away from tourists and one that encompasses the local culture, and that is EXACTLY what we got with Chef Dylan!
His smile entered the room before he did and it did not take long to feel like we had always known him. We stopped at three different places that we would have driven past if on our own. Dylan explained the menu & cooking techniques while we ate some of the best food on our trip.
We had Cayman style beef, coconut grouper, Cayman style snapper as well as jerk chicken and jerk pork. Chef Dylan offered a few tour options including more conventional to adventurous eating. The planning was easy & he was very prompt in communicating. With the combination of mouth watering food, colorful establishments and Chef Dylan’s knowledge of Grand Cayman, you cannot go wrong!
